Chef’s Notes: Wondering all day what I was going to do with the purple cauliflower? Me too; I debated all day with what to do with it. We recently bought some so-so dates, so I thought I could use them and roast the cauliflower. Or, I could be adventurous and mash it. Adventure beckoned (and SmithCale encouraged).
Plan of Attack:
1. Simmer Cauliflower
2. Mix & Mash
Ingredients for 2:
1 (2 person serving) recipe Blackened Tilapia (minus basil & oregano)
1 head purple cauliflower, cut into florets
2 ½ C water
½ C veggie broth
¼ C buttermilk
1 oz romano cheese, shredded
1 oz gouda, shredded
½ tsp fresh thyme, chopped
Salt and pepper to taste
Instructions:
- Bring cauliflower, water and broth to a boil. Cover and reduce heat to medium; simmer 10 minutes until cauliflower is softened
- Strain cauliflower into stand-mixer or bowl. Add buttermilk, cheeses, thyme, salt and pepper and mash until smooth (remembering it’s cauliflower…not potatoes)
- Reheat pot back to medium heat and return cauliflower mixture to pan and heat for a few minutes just to thicken.
- Enjoy!
