Meatless Monday- Expensive Goat Cheese Flatbread

Chef’s Notes: Like any good foodie store, Fresh had free samples. Previously, SmithCale had picked a moderately priced goat cheese, but then ran across a free sample for Goat Cheese marinated in olive oil and Herbs de Provence. He HAD to have it and it HAD to be $13.99 (isn’t it sad I’m such a miser that I remember exactly how much it cost). He was right, as he usually is, and it was delicious. What can I say? He has great taste ;)

Plan of Attack:
1. Saute veggies
2. Assemble & Bake
Ingredients for 2:
2 garlic Tandoori Naan (flatbreads)
2 oz Goat Cheese
1 tsp olive oil with herbs de Provence
1 tsp olive oil
1 ripe tomato, diced
1 small, yellow bell pepper, choppped
1 small, purple bell pepper, chopped
¼ yellow onion, sliced into rings
7-8 fresh basil leaves, cut into ribbons
Salt and pepper to taste

Instructions:
  1. Preheat oven to 400 degrees
  2. Heat plain olive oil in a skillet to medium-high heat. Add onions and bell peppers, lower heat to medium-low and sauté for 10-15 minutes until nicely browned
  3. Spread goat cheese evenly onto the Naan bread and drizzle the olive oil with Herbs de Provence on top
  4. Divide basil ribbons, tomatoes and onion/pepper mixture evenly onto both flatbreads
  5. Salt and pepper to taste
  6. Bake for 12-15 minutes
  7. Enjoy!
