Chef’s Notes: What do you do when you have leftover ham, stopped by a roadside stand and bought homegrown red potatoes/onions and the high was in the 50s today with rain? MAKE SOUP! Even if the temperature this week is in the 80s, make this soup I will personally guarantee everyone will love it!
Plan of Attack:
1. Boil Soup
2. Make thickener
3. Combine & Simmer
Ingredients for 4:
1 ½ lb red potatoes, cubed
6 oz ham, cubed
½ C frozen green peas
1 onion, chopped
4 C water
1 ½ Tbsp chicken bouillon
Pepper to taste
4 Tbsp unsalted butter
4 ½ Tbsp all-purpose flour
1 C milk
½ C water
Instructions:
- In a large pot add potatoes, onion, peas, ham and water. Boil for 15 minutes. Then add chicken bouillon and pepper
- When potatoes only have about 7 minutes left, heat butter in a skillet over medium heat
- Add flour and whisk until smooth and until all is added, about 1 minute in all
- Then add the milk and water and whisk until thickened (3 ½-4 minutes total)
- Add milk mixture to the soup pot, and simmer on medium-low heat for 45 minutes- 1 hour
- Enjoy!
This past wedding weekend, I only fell down the stairs once sans wine.
