Friday: Mexi Pizza

Adapted from a California Kate’s adaptation of a Whole Foods recipe
Personal Note: Ever since we first tried this, it was love at first bite! I couldn’t think of a better way to ring in the weekend than with a homemade pizza! The options are limitless; also check out California Kate’s adaptation as well. And just another little thought: a happy tomatillo sauce is a homemade tomatillo sauce.

Plan of Attack:
1. Make a crust decision
2. Decorate
3. Bake at 425 degrees for 20-25 minutes
Ingredients for 1 Pizza:
1 store bought or homemade pizza crust
½ C tomatillo salsa (click for my recipe if you so desire)
¼ pound mozzarella or mexi blend cheese, shredded
1 C black beans, rinsed and drained
1 C frozen yellow corn, thawed (I’ve also been known to be gutsy and put it on frozen)
¼ red onion, sliced into thin rings
¼ C fresh cilantro, chopped

Instructions:
  1. Preheat oven to 425 degrees. Prep pizza crust of choice
  2. Spread tomatillo salsa over crust and apply cheese on top.
  3. Decorate with black beans, corn, red onion and cilantro
  4. Top with more cheese, if desired
  5. Bake for 20-25 minutes either on a pizza stone or in a pizza pan
  6. Enjoy!
