Adapted from a California Kate’s adaptation of a Whole Foods recipe
Personal Note: Ever since we first tried this, it was love at first bite! I couldn’t think of a better way to ring in the weekend than with a homemade pizza! The options are limitless; also check out California Kate’s adaptation as well. And just another little thought: a happy tomatillo sauce is a homemade tomatillo sauce.
Plan of Attack:
1. Make a crust decision
2. Decorate
3. Bake at 425 degrees for 20-25 minutes
Ingredients for 1 Pizza:
1 store bought or homemade pizza crust
½ C tomatillo salsa (click for my recipe if you so desire)
¼ pound mozzarella or mexi blend cheese, shredded
1 C black beans, rinsed and drained
1 C frozen yellow corn, thawed (I’ve also been known to be gutsy and put it on frozen)
¼ red onion, sliced into thin rings
¼ C fresh cilantro, chopped
Instructions:
- Preheat oven to 425 degrees. Prep pizza crust of choice
- Spread tomatillo salsa over crust and apply cheese on top.
- Decorate with black beans, corn, red onion and cilantro
- Top with more cheese, if desired
- Bake for 20-25 minutes either on a pizza stone or in a pizza pan
- Enjoy!
