Friday: Autumn Sausage NonFried Rice

Personal Note: Since we were leaving Friday right after work to head to ACU’s Homecoming , I wanted to make something that could be eaten fairly easily in the car. Well, I pick up SmithCale and let him eat, then we switch drivers and I eat. I’ve started brown-bagging our dinners when we leave for the weekend for a while. Since I know we’ll eat out when we’re there, I figure I’ll lessen the damage by cutting out an extra meal. Yes, I am that cheap/delusional.

Plan of Attack:
1. Add ingredients to Crockpot
2. Cook low for 5-7 hours or high for 3-4 hours
Ingredients for 2:
½ pound sausage (already cooked)
½ large apple or 1 small apple, chopped leaving the peel on
½ yellow onion, chopped
1 carrot, chopped
1 ½ cooked rice (I had leftover jasmine rice)
¼ C raisins
½ Tbsp parsley flakes
½ Tbsp brown sugar
¼ tsp allspice
¼ tsp cinnamon
1/8th tsp black pepper
¼ C water

Instructions:
  1. Add all ingredients into Crockpot*
  2. Stir
  3. Cook on low for 5-7 hours or high for 3-4 hours

*I happen to by very intimate with my slow cooker to know when I cook non-liquid meals in it, it likes to burn on one side. So since I was going to be out all day and couldn’t baby it, I lined the inside of my Crockpot with foil and then proceeded as normal*
