Zucchini Fries

Chef’s Notes: Be sure to cut your zucchini pretty then, so that your kids can cover up the zucchini-ness with ketchup. I thought these were ok, but I’m an adult, and even I needed a little ketchup. But, still can’t beat finding a new way to get in those veggies!

Plan of Attack:
1. Prep zucchini
2. Coat
3. Bake

Ingredients for 4:
2 medium zucchinis cut into wedges
2/3 C panko breadcrumbs
½ tsp Italian seasoning
Salt and pepper to taste
1 Tbsp grated parmesan cheese
2 egg whites

Instructions:
  1. Preheat oven to 475 degrees
  2. In a shallow bowl stir together breadcrumbs, salt, pepper and parmesan cheese
  3. In another small bowl lightly beat 2 egg whites
  4. Dip zucchini into the egg whites, and then dredge in breadcrumb mixture. Repeat until all are coated
  5. Place on a pizza stone or sprayed cookie sheet
  6. Bake for 5 minutes, turn fries, and then cook an additional 10 minutes
  7. Enjoy!
