Bacon & Collard Greens

Chef’s Notes: I had always thought that collard greens were for old people, but I was so wrong. I know totally understand why this is considered soul food, because they’re awesome! What’s not to love? Vitamins, minerals, folic acid and bacon!

Plan of Attack:
1. Fry bacon
2. Wash and prep greens
3. Simmer for 45 minutes

Ingredients for 4:
2 slices bacon
1 yellow onion, diced
2 cloves garlic, minced
1 tsp salt
½ tsp pepper
2 C chicken broth
¼ tsp red pepper flakes
1 lb (1 bunch) fresh collard greens, washed, dried and cut into 2 inch pieces

Instructions:
  1. Heat bacon in a large pot over medium-high heat and cook bacon until fully cooked. Remove from pot and crumble.
  2. Return bacon back to pan along with the onion and cook for 5 minutes.
  3. Add garlic and cook until fragrant; about 30 seconds
  4. Add the collard greens and stir until they start to wilt; about 3 minutes
  5. Finally pour in the chicken broth, salt, pepper and red pepper flakes. Bring to a simmer and reduce heat to low. Cover and simmer for 45 minutes; stirring occasionally.
  6. Enjoy!
