Chef’s Notes: I made this chicken a couple of Saturdays ago, and it was so great that I had to make it on a weekday so that I could share! The best part is the cheddar and breadcrumb crisps that form around the chicken. I mean, it’s so good that insanity might ensure! If that happens, don’t tell me I didn’t warn you!
Plan of Attack:
1. Preheat oven
2. Brown garlic in butter
3. Coat chicken & bake
Ingredients for 2:
1 boneless, skinless chicken breast
1 Tbsp unsalted butter
2-3 cloves of garlic, minced
1/3 C panko breadcrumbs
¼ C grated parmesan
½ C grated cheddar cheese
1/8 tsp dried parsley
1/8 tsp dried oregano
1/8 tsp black pepper
Pinch of salt
Instructions:
- Preheat oven to 350 degrees
- In a small saucepan melt butter over medium-low heat. Then add the garlic and cook for about 5 minutes. Remove from heat.
- In a shallow bowl mix the breadcrumbs, parmesan cheese, cheddar cheese, parsley, oregano, salt and pepper
- Spray an 8x8 baking dish with cooking spray; set aside
- Dip the chicken breast in the garlic/butter mixture on both sides, and then dredge in the cheese mixture. Place in the prepped baking dish and sprinkle the remaining garlic/butter mixture and cheese mixture around the chicken.
- Bake for 35-40 minutes or until chicken is fully cooked and no longer pink
- Enjoy!
