Chef’s Notes : Cole slaw has never been my thing, but I think I was just confused. What isn’t delicious about cabbage smothered in mayo and sugar? I definitely lowered the sugar in my recipe because the cabbage is fairly sweet by itself, and trust me, you won’t notice.
Plan of Attack:
1. Night before, mix cole slaw
Ingredients for 8:
1 (16 oz) bag of shredded cabbage aka cole slaw mix (or go all out and shred your own cabbage!)
2 Tbsp diced onion
Scant 2/3 C olive oil mayo (or Miracle Whip)
1 ½ Tbsp vegetable oil
1/3 C sugar
1 Tbsp white vinegar
¼ tsp salt
½ tsp poppy seeds
Instructions:
- In a large bowl combine add cabbage mixture and onion
- In a smaller bowl beat together mayo, oil, sugar, vinegar, salt and poppy seeds
- Mix mayo mixture into the cabbage mixture until well combined
- Cover and allow to sit for at least 2 hours, but preferably overnight
- Enjoy!
