Cole Slaw

Chef’s Notes : Cole slaw has never been my thing, but I think I was just confused. What isn’t delicious about cabbage smothered in mayo and sugar? I definitely lowered the sugar in my recipe because the cabbage is fairly sweet by itself, and trust me, you won’t notice.

Plan of Attack:
1. Night before, mix cole slaw

Ingredients for 8:
1 (16 oz) bag of shredded cabbage aka cole slaw mix (or go all out and shred your own cabbage!)
2 Tbsp diced onion
Scant 2/3 C olive oil mayo (or Miracle Whip)
1 ½ Tbsp vegetable oil
1/3 C sugar
1 Tbsp white vinegar
¼ tsp salt
½ tsp poppy seeds

Instructions:
  1. In a large bowl combine add cabbage mixture and onion
  2. In a smaller bowl beat together mayo, oil, sugar, vinegar, salt and poppy seeds
  3. Mix mayo mixture into the cabbage mixture until well combined
  4. Cover and allow to sit for at least 2 hours, but preferably overnight
  5. Enjoy!
