Welcome to St. Patrick’s Day Week! Just like birthday and other holidays that include food, I like to dedicate the entire week to that theme (watch out Cinco de Mayo!). I'm going live this week so hold on to your seats!

Chef’s Notes : First of all, welcome back natural lighting!!!!!! What’s more Irish than cabbage? Although, I really can’t call this dish “Irish”, because it has cumin, Ranch-style beans, and salsa, but it has cabbage! So preparing our taste buds for Thursday, and because I needed a slow-cooker meal for today: enter Cabbage Patch Soup.
Plan of Attack:
1. Brown meat and onion
2. Throw in Slow Cooker
3. Cook on low for 6-8 hours
Ingredients for 4:
1 tsp olive oil
½ lb very lean ground meat (I used beef)
1 yellow onion, chopped
1 (15 oz) can ranch-style beans + ½ C water to rinse can
½ tsp cumin
3 cloves garlic, minced
½ head of cabbage, chopped (save rest for the BIG day)
1 green bell pepper, chopped
1 (14.5oz) can stewed tomatoes, undrained + ½ C water to rinse can
2 stalks celery, chopped
¼ C picante sauce
Salt and pepper to taste
Instructions:
- Heat olive oil in skillet on medium-high heat
- Add ground meat and onion and brown for 4-5 minutes or until meat is cooked through. (Good time to chop your veggies)
- Add beans, stewed tomatoes, water, garlic, cabbage, celery, bell pepper to the crock pot
- Add the meat and onions and season with cumin, salt and pepper. Stir
- Cook on low 6-8 hours
- Enjoy!
Why did we need a slow cooker meal? Because we were headed north to see my mother at family night with her singing group Sweet Adeline. They performed for us their show they will compete with next week!
