Friday: Baba Ghanoush! with Fresh Veggies & Pita Chips


Personal Note: You know how I enjoy packing a dinner for us when we hit the road. This was by far SmithCale’s favorite way to eat eggplant. It was portable, delicious with a big dose of healthy; beat that fast food!

Plan of Attack:
1. Cut veggies
2. Toast pita chips
Ingredients for 2:
1 red bell pepper, seeded and sliced
4 small carrots, peeled and cut into sticks
2 whole-wheat pitas
1 Tbsp olive oil
1 Tsp salt
½ tsp dried basil

Instructions:
  1. Preheat oven to 400 degrees
  2. Cut each pita ½ into 4 slices (8 slices per whole pita)
  3. Brush each pita wedge with olive oil and sprinkle with salt and basil
  4. Bake for 5-7 minutes on a pizza stone or baking sheet of your choice
  5. Serve with Baba Ghanoush! And veggies
  6. Enjoy!
